Our two new recipes this week were green chile chicken soft tacos and pepper crusted tuna. The tacos were very very delicious. Fire roasted poblano peppers and sauteed onions, with chicken pan seared in a lime and garlic glaze. Add a little salsa of your choice in a warm corn tortilla and that's it. Couldn't be simpler, and couldn't be yummier.
The pepper crusted tuna was good, but I don't think it will make regular appearances on our menus. Trader Joe's tuna is imported and wild caught, so it's not the best in an ecological sense. Next week I'd like to try some crunchy breaded shrimp instead.
